In 2010 Gino De Schrijver, a chef of 35 years, developed a line of savory and sweet culinary preserves to pair with every course of a meal. Unexpected herbs blend with fruits to yield complex, well balanced flavors. Gino transformed the underutilized spaces of The Delaware Valley Volunteer Firehouse into a FULL production facility. In exchange, they receive 5% of Firehouse Jam's gross revenue.
The surrounding farms inspire many of their jams. They preserve only with 100% certified organic cane sugar and lemon.
Bacon - Everything is better with bacon! Our marmalade is made with nitrate-free bacon, oranges, balsamic caramelized onions, roasted garlic, and fresh thyme. Perfect on a burger, grilled cheese sandwich, panini, or even pancakes. Try it on scrambled eggs!
Banana - Tastes like a perfectly ripe banana with hint of fresh lemon juice and pure vanilla paste. Perfect on PBJ, mixed in yogurt, or ice cream topping.
Blueberry Cardamom - Dark, rich, sweet and bursting with local, blueberry flavor. Lightly mashed for a semi-chunky texture, with a subtle finish of cardamom. Doll it up with some garlic and port to make a surprising sauce for duck. Great in yogurt or mixed with salad dressing.
Orange Saffron Cardamom - A perfectly balanced marmalade with hints of saffron and cardamom. Goes beautifully with hard cheeses and Middle Eastern dishes.
Spicy Bacon - A spicy take on the best selling marmalade is made with nitrate-free bacon, white pepper, oranges, balsamic caramelized onions, roasted garlic, and fresh thyme.
Strawberry Lemon Lavender - This seasonal strawberry jam is made with local, strawberries in small batches. Strawberries bursting with flavor, bright with subtle hints of citrus and a faint finish of lavender
